Macaroni is something all of us have become familiar with, now. It is basically
dry pasta, shaped like an elbow, and is thus, popularly known as elbow
macaroni.
Macaroni has become quite a popular snack in India and we all have different
versions of this one humble pasta.
I think quite a lot of you will agree with us when we say – we all love a good ol’
‘Desi’ twist to modern, international dishes and cuisines! It is sometimes as
simple as a touch of Indian spices to make a fusion recipe super delicious.
And keeping this in mind, we’re bringing you a fun, easy fusion recipe –
Indian-Style Masala Macaroni.
Prep Time: 15 minutes
Cook Time: 25-30 minutes
Ingredients:
1. For the Macaroni:
*5 cups – Water
* 3 cups – Elbow Macaroni
* 1 ½ tablespoon (tbsps) – Cooking Oil
* 1 ½ tablespoon – Salt
2. For the Masala:
* 2 tablespoons – Olive Oil
* 6-7 pods – Garlic, finely chopped
* 2 medium-sized – Onions, diced
* 1 medium-sized – Green Capsicum, diced
* 1 medium-sized – Red Bell Pepper, diced
* 1 medium-sized – Yellow Bell Pepper, diced
* 1 medium-sized – Carrot, diced
* 1 cup – Sweetcorn kernels
* Salt
* 3-4 sachets – Maggi Masala-ae-Magic seasoning
* 1 ½ tablespoon – Soya Sauce
* 1 tablespoon – Tomato Ketchup
* Oregano
* Chilli Flakes
Part 1: Preparation of Macaroni:
* Take a saucepan and add 5 cups of water to it, while putting it on a high
flame.
* To the water, add oil and salt in already mentioned quantities and stir. Let
the water bubble away until it starts simmering.
* Add 3 cups of elbow macaroni to the water and stir. Switch the heat from
medium-high to low and vice-versa as and when required.
* Once the macaroni is cooked al-dente (it usually takes 8-10 minutes), strain
it until the water is drained out. Apply a little bit of oil to the macaroni so it
that it doesn’t stick to each other and leave it aside.
Part 2: Preparation of Masala:
* In a pan, add 2 tbsp olive oil and let it heat up for some time on medium
heat.
* To the oil, add in the finely chopped garlic and cook it for about 1½ - 2
minutes.
* Once the garlic starts getting golden, add in your chopped onions and mix it
together. Cook the onions for about 5 minutes or until they start getting
translucent.
(Note: don’t cook the onions completely or they’ll turn soggy by the end.
Keep them slightly undercooked in order to feel the bite.)
* Once the onions are par-cooked, add in the vegetables – chopped capsicum,
bell peppers and carrots – along with the sweet corn kernels and mix well.
Let this mixture cook for about 3-4 minutes or until the vegetables are
halfway cooked.
* Now add in salt as per your taste and 3 sachets of the Maggi Masala-ae-
Magic seasoning and stir well.
(Note: In case you prefer your macaroni quite spicy, add in Red Chilli
Powder for that extra flavour and spice. I don’t usually add in any other
spices since I prefer mine with just the masala seasoning.)
* To the mixture, add 1½ tbsps soya sauce and 1 tbsp tomato ketchup. Mix
them properly so that everything is incorporated well.
* Now add in your boiled macaroni, along with oregano and chilli flakes,
according to your taste. Mix everything well.
Ta-da! Your Indian-Style Masala Macaroni is ready!
Serve it hot in a bowl, and sprinkle oregano and chilli flakes on the top for extra
deliciousness!
